Yellow starthistle is a winter annual or biennial forb, reaching heights between 1 and 3 feet. During its seedling stage, it forms a basal rosette with deeply lobed leaves reminiscent of a dandelion. As the plant matures, the upper leaves alternate, becoming narrow and undivided. From July to August, yellow, knapweed-like flowers with sharp spines appear.
Source and Habitat
Our star thistle honey is sourced from the Columbia Gorge in Oregon, an area where this plant thrives naturally.
Historical Uses
Historically, related thistle species were valued in folk medicine for their supportive effects on liver health, detoxification, and digestion. Healers often brewed the aerial parts into teas or infusions, using them as gentle remedies for digestive complaints, mild fevers, and general malaise.
Flavor Profile
Star thistle honey is light amber gold in color, offering a floral sweetness with a CINNAMON caramel-like aftertaste. Its herby notes make it a favorite among chefs for gourmet savory dishes.
Health Benefits
The health benefits of star thistle honey include a strong energizing effect, natural antibacterial properties, hepatoprotective action, and positive effects on digestion. It contains bioactive compounds such as flavonoids and phenolic acids, which help combat oxidative stress. This antioxidant activity supports anti-aging and may reduce the risk of chronic disease. Incorporating star thistle honey into your diet may also help decrease inflammation-related issues.
Uses for Athletes
Honey is often used by athletes as a pre- or post-workout fuel. Studies indicate that honey can enhance endurance and boost energy levels during workouts, making it an effective alternative to sugar water or commercial sports gels.
